For cornbread:
1. In a large bowl, mix together cornmeal, flour, salt, baking powder, and sugar.
2. Mix in buttermilk until just incorporated. Add egg and mix again. Add mayonnaise and mix again. Don’t overmix.
3. Add corn, if desired.
4. Add cooking oil to an oven-safe cast-iron skillet and place in a 425 degree F. oven for 5 to 6 minutes until oil is sizzling hot.
5. Pull out skillet, add dough. Dough should sizzle.
6. Return skillet to the oven and bake for 25 to 30 minutes, or until the top is golden brown.
For honey butter:
7. In a small bowl, blend honey with butter using a hand mixer until smooth.
8. Serve cornbread hot with butter.
