IF AFTER MAKING THIS recipe you hear spectral voices, there are only three possibilities: 1. Your sibling is playing a prank on you. 2. You’re baking in a graveyard. 3. You’re a shadow charmer. If you are a shadow charmer, try coaxing these Zombie Cake Eyeballs into serving you.
INGREDIENTS: Favorite cake recipe or boxed cake mix 1½ cups buttercream frosting, divided (see recipe on page 61) or 1 (16-ounce) tub of prepared frosting, divided 1 (12-ounce) bag white chocolate candy melts or wafers Lollipop or cake pop sticks Dark brown M&M’s candies ¼ (.67-ounce) tube green gel food coloring ¼ (.67-ounce) tube red gel food coloring Floral foam
INSTRUCTIONS:
Make a batch of your favorite cake recipe, or prepare a boxed cake mix according to package instructions. Cool the cake, then crumble into a large mixing bowl.
Add 1 cup of buttercream frosting or other prepared frosting. Mix together until fully blended.
Set in refrigerator to cool for at least 30 minutes.
Once chilled, roll out small (approximately 1½-inch) balls of cake mixture and place on cookie sheet. Put cookie sheet back in the refrigerator to chill for at least 30 minutes.
While the cake balls are chilling, start melting the white chocolate pieces. Pour about half the bag of candy melts into a microwave-safe bowl. Microwave on half power in 1-minute increments until the chocolate is melted and smooth. Do not overheat.
Remove cake balls from the refrigerator. Dip the very end of the lollipop stick in the melted white chocolate and stick into center of a cake ball, then allow to set for a few minutes. Once secure, dip the cake ball on the stick into the melted chocolate. Fully cover, allowing the excess to drip off. Place the stick in the floral foam to allow the cake pop to set. Repeat for remaining cake balls. You may need to re-chill the cake balls partway through, and you may also need to melt more white chocolate.
Once the cake pops are set, mix ¼ cup buttercream frosting and ¼ tube of green gel food coloring to make green frosting—adjusting the food coloring amount to make the frosting either more or less vibrant. Mix ¼ cup buttercream frosting and red gel food coloring to make red frosting, adjusting food coloring amount to make the frosting either more or less vibrant. Use two piping bags or small sandwich bags with a hole cut in the corner to decorate the cake pops by piping a small (approximately ¾-inch) circle of green frosting in the center of each ball. Stick a dark chocolate M&M candy in the center of the green circle, then pipe red wavy lines around the cake pop to look like a bloodshot eye.
